This is what I call a liquid lunch.
As an ode to one of my favourite types of pizza, the ham + pineapple pizza cocktail is a combination of sweet, spicy, smoky and herbal (and I guess meaty) goodness. Despite its perhaps off-putting name, this is one of the most delicious concoctions I have made to date! Using pizza-related ingredients including rosemary, chili peppers, pineapples, black pepper and more, this cocktail proves to be a complex palate pleaser. And the savoury ham and parmesan crisp garnishes pair perfectly with the cocktail itself making this an all around delightful beverage (and snack).
1 oz Peated Scotch
1 oz Sons of Vancouver Chili Vodka (not for the faint of heart!)
1 oz Rosemary Simple Syrup*
1 oz Pineapple Juice
1/2 oz Fresh Lemon
4 dashes Cardamom Bitters
Cracked Black Pepper
Sausage Ham, Parmesan Crisp** + Rosemary for garnish
You will build this cocktail directly in the glass in which it’s served. In a rocks glass filled with ice add simple syrup, bitters, lemon, scotch and chili vodka. Stir a few times and top with pineapple juice and lemon juice. Stir once more. Top with freshly cracked black pepper and garnish with ham, rosemary and parmesan crisp.
*To make the rosemary simple syrup add a 1/2 cup of sugar, 1/2 cup of water and 2 rosemary sprigs into a small pot or frying pan on low to medium heat. Stir and let simmer for 5-10 minutes ensuring that the sugar is dissolved. Empty ingredients into a mason jar and let sit for 48-72 hours. Remove rosemary and voila!
**To make parmesan crisps, buy shredded parmesan and place onto a baking stray lined with parchment paper in the oven on broil. Keep an eye on the crisps and remove when light to golden brown. Let sit and cool down. Once cool, they will be crispy and delicious!
