While an โ€˜old wivesโ€™ taleโ€™ can often be found to be an urban legend or superstition, one story that holds true is that Old Tub was the original recipe for Jim Beam Bourbon. Unfiltered, bottled at 100 proof, and made using the sour mash process, this bourbon was rugged and rich with vanilla, caramel corn and nutty notes. Now available for a limited time in BC, Alberta and Ontario, this higher proof bourbon is prevalent and provocative in this cocktail.

โ‡ข 60 ml Old Tub Bonded Bourbon
โ‡ข 30 ml Verjus Blanc (or sub 30ml White Grape Juice and 10ml Lemon Juice)
โ‡ข 10 ml Red Wine Syrup*
โ‡ข 3 dashes Fee Brothers Cherry Bitters
โ‡ข Lemon Twist

Add all ingredients into a cocktail shaker with ice. Shake until diluted and chilled. Double strain into your favourite cocktail glass and express with lemon oils and garnish with your favourite cherries. I personally prefer amarena!

To make your Red Wine syrup, get a full-bodied red (I used a Cabernet Sauvignon and bring 100 ml of Red Wine and 50ml of Sugar to a boil in a small saucepan. One itโ€™s reached a boil, turn down the heat to low and let simmer for 10โ€“15 minutes. Remove from heat and let cool before using for cocktails. Keep refrigerated for up to 2 weeks.
