If you didnโ€™t see my review of @bearfacewhisky 1/11 Series back in October, you may not know that this whisky actually contains mezcal in it thanks to unique requirements in Canada that allow whisky producers to blend up to 9.09 percent of non-whisky into whisky and still call it whisky.

Perhaps I see a bit of myself in this expression, also being a mysterious mix and allโ€Šโ€”โ€Šbut I digressโ€ฆ

Creating cocktails that are 4โ€“5 ingredients but a complex marriage of layered flavours has been my JAM this year. โœจ

This cocktail features a corn-based whisky with hints of smoke from the mezcal which is contrasted by the sweet botanical notes in Strega, an Italian liqueur that I can best describe as โ€˜similar to Yellow Chartreuseโ€™. The lemon juice creates acidity, the apricot syrup adds depth and the firewater bitters adds a hint of spice to play off of the smoke.

75 ml Bearface 1/11 Series
15 ml Strega
30 ml Lemon Juice
15 ml Apricot Syrup*
1 dash Scrappyโ€™s Firewater Bitters

Add all ingredients into a cocktail shaker with ice. Shake until diluted and chilled. Double strain into your favourite cocktail glass and express with lemon oils and garnish.

For a super simple Apricot Syrup, find a 500ml can of apricots and puree the entire contents in a blender with half a cup of sugar. You donโ€™t want this syrup to be too sweet as there are other sweetening agents in the cocktail
