Today’s version once again uses a Canadian Whisky! A relatively newer release in the Canadian whisky sphere, Bearface Whisky has really become a must-have on my home bar.
One of the most interesting humans I know, Master Blender Andres Faustinelli created the original Bearface 7 Year (which is used in this cocktail) with such intriguing elements.
You would think that a 100% corn whisky would be all vanilla and sweetness but thanks to cask aging in 3 different styles of barrels (Ex-Bourbon American Oak, Ex-Red Wine French Oak and new Hungarian Oak) there’s A LOT MORE going on in this whisky.
Bearface 7 Year is full-bodied and rich, with notes of buttered popcorn🍿, maple fudge, bacon 🥓, tobacco 🚬 and dried fruits 🥭. This, paired with Vya Sweet vermouth (which is chock full of Christmas spices, dried figs, orange 🍊 and more) makes for a rich and decadent Manhattan.
It’s a wild pairing in this drink.

Ingredients:

60 ml Bearface 7 Year
30 ml Vya Sweet
2-3 dashes Angostura Bitters
Garnish: Orange Twist

Method:

In a mixing glass add all ingredients with ice. Stir down for 30-45 seconds until diluted and chilled. Strain into a chilled coupe and express orange oils over. Garnish with an orange twist .
